I beginning to notice a trend here at Grab Some Joy and that is a love for breakfast! (See my Sweet Potato Power Breakfast, Pumpkin Maple Overnight Oats and Blackberry Coconut Chia Pudding for more breakfast love.) And with cloudy overcast whether here Oregon my maple tree turning is suddenly the most beautiful electric orange and red color! Did I mention that it’s also raining, which means that I am now perfectly content curling up in the morning with a cozy blanket and this this Dreamy Buckwheat Breakfast! It will truly fulfill all of your hot cereal dreams and make those dreary days so much better!

Now at first glance you might assume this is a bowl of oatmeal when in fact it’s actually BUCKWHEAT!  Did you know that Buckwheat is actually a SEED?! It is in fact not  related to wheat at all making it a great option for those that need to or prefer to eat gluten free. I’ts also super high in protein and easily digestible so you will actually feel full afterward and you stomach will feel great too.

It’s also a superstar at soaking up whatever liquid you cook it in.  Most package instructions will say to use water and my recommendation is to use either unsweetened vanilla coconut milk or unsweetened vanilla almond milk.  Both will you you such a creamy and flavorful texture which is so so yummy!

Feel free to customize your Dreamy Buckwheat Breakfast bowl to your liking. I topped mine with:

Almond milk yogurt (Kite Hill is my favorite!)

Bananas

Cocoa nibs

Walnuts

Cinnamon

Coconut

and Honey!
