Mandarin Arugula Flat Bread Pizza
This easy and healthy Mandarin Arugula Flatbread Pizza topped is topped with goat cheese pine nuts and sweet balsamic vinegar.

  1. Preheat oven to 400 degrees.
  2. In a small saucepan on medium/high heat, whisk together the balsamic vinegar and honey. Bring to a boil for 1-2 minutes stirring constantly with a rubber spatula. The balsamic should start to become a bit thick and syrupy. Turn the heat off but keep it on the burner until ready to use.
  3. With a brush or the back of the spoon, cover the top of the flat bread with an even layer of olive oil all the way to the edge and then season with salt and pepper.
  4. Next, in order, evenly cover the pizza with the arugula, mandarin oranges, crumbled goat cheese, and pine nuts.
  5. Carefully place the flat bread directly on the oven rack, and bake for 8-10 minutes until the edges look crispy and are light brown.
  6. When finished, carefully take the pizza out and place on a cutting board. With a spoon, or spouted measuring cup, drizzle desired amount of balsamic glaze on top. NOTE: if you find that your balsamic has gotten too thick, turn the heat back on to low for a minute and stir, it should look like the image below. If not, add a teaspoon or two more of the balsamic vinegar and stir until combined.
