Thank you thank you Linsday! Which made me wonder if I could incorporate the same concept and and make it work in a matcha latte and the answer is of course a huge, YES! And what’s great about this Matcha Cashew Latte recipe is that whatever milk or dairy free alternative you choose to use it will still come out amazing. Pictured, I used Trader Joe’s Unsweetened Vanilla Almond Milk, but I also also really love it with unsweetened coconut milk and cow’s milk. Whichever milk you choose the result is still the same, pure deliciousness!

Recipe Note:

I HIGHLY HIGHLY recommend that you ONLY use a high powered blender for this recipe such as a Ninja, Vitamix, or Blendtec. Otherwise you will find that your Matcha Cashew Latte will have a thinker or even a chunkier texture. I have a Ninja which is probably the least powerful of the three I listed here so I found it necessary to blend it for 2-3 minuets for the best, most creamy outcome.

Ingredients
Servings: 12 ounce serving
Instructions
  1. In a small saucepan stir together the milk, cashews, salt, honey and matcha powder. (The matcha powder will look clumpy at first and that's ok.)
  2. Heat until it just starts to boil.
  3. Take off of heat and carefully transfer to a high speed blender. Blend for 2-3 minutes on high speed.
  4. Serve in your favorite mug.
