White Chocolate Cherry Bites

I’ve got quite the girly girl on my hands. My little one is all about tutus, doll houses, and her “Princess Baby” book.  If you were to step inside my house on any given day you would find baby dolls, or affectionately known as, “beebees” scattered across the house. You might also find, baby doll clothes, bottles, and blankets.   Is my toddler obsessed with baby dolls, yes, and it is oh so adorable! She is also always on the go so I’m constantly on the hunt to find snacks that are both nutritious, filling, and something mama wouldn’t mind eating either. These White Chocolate Cherry Bites are a win win!!

These little White Chocolate Cherry Bites are quick to whip up, and store really well in the fridge.  Lasting approximately 4-5 days.

Ingredients
Servings: dozen give or take on size
Instructions
  1. Blend the almonds, and flax together in a food processor or high speed blender until fine crumbles form.
  2. Add the dates, cherries, coconut and honey, and pulse until the mixture starts sticking together.
  3. Mold into individual golf ball sized balls. Press in desired amount of white chocolate chips into each ball.
  4. Let chill in the fridge for 10 minutes to set up before serving. Store in an airtight container in the fridge.
